Olive Tapenade Bruschetta

 

  1. Cut French baguette into 1 inch circles.  Toast until crispy.
  2. Spread 1-2 tablespoons of pre-made out of the jar olive tapenade on each piece of bread.

 

To make it a bit more home made-make your own olive tapenade.  Just buy 2 types of olives in the can, add a bit of olive oil, maybe some roasted red peppers from the jar-blend and spread.

 

Honey Mustard Chicken

 

  1. Preheat oven to 350 F.
  2. Butterfly 6-8 oz of boneless skinless chicken breast per person.
  3. Whisk 1 part honey, 1 part mustard, 1 part olive oil, salt and pepper to taste in a bowl.
  4. Brush mixture on each side of chicken.
  5. Place chicken in greased baking dish.  Bake on each side 10-12 minutes (depending on thickness of chicken breast)

 

The thinner your chicken breast, the less you cook it.. and the quicker you get out of the kitchen and at the table!

 

 

Spinach and Garlic Stuffed Baked Potatoes (in the microwave)

  1. Bake one potato per guest (check out www.howtobakeapotato.com if you don't know how).
  2. Defrost frozen chopped spinach in microwave according to directions on package (about 4 oz frozen spinach per potato).
  3. Drain liquid out of spinach.
  4. Mix in salt, pepper, and minced garlic (a pinch for each potato)
  5. Cut potato in half, top with hot spinach

 

Add butter/margarine OR a bit of heavy cream (about 1 tbsp per potato)to hot spinach mixture for more of a creamed spinach taste.

 

Pan Fried Artichoke Hearts

  1. Drain can of artichoke hearts (about 1 can per 4 guests)
  2. Sauté artichoke heart in pan on medium heat with either olive oil or low fat cooking spray

 

Add minced garlic to the olive oil and artichokes for a more intense flavor.

 

 

Out of the Box Chocolate Ganache

  1. Make your favorite boxed brownies-to make it pareve (non-dairy) just use margarine instead of butter
  2. Melt bittersweet chocolate chips in microwave safe bowl.

(note: most bittersweet chocolate chips are pareve)

  1. Combine Cool Whip, or another non-dairy whipped topping, with melted chocolate.
  2. Spread over the cooled brownies.

 

Don't tell anyone the brownies are from a box-they taste better when people think they are homemade.
